Lesson 3: Cutting Onion Slices for Grilling

Step 1

Soak bamboo skewers or long wooden toothpicks in water to cover for one hour, so the skewers won’t burn on the grill. Slice off the top end of the onion with the skin on, so that you start with a flat end.

Step 2

Peel off the skin and discard.

Step 3

Cut slices of even width, at least one-third of an inch thick, through the onion.

Working with one onion slice at a time, lay it flat on the cutting board. Using a water-soaked bamboo skewer or long wooden toothpick, insert the tip into one side of the onion slice, midway between the top and bottom.

Keeping the skewer parallel to the onion slice, insert the skewer all the way through the onion slice, so that it emerges on the opposite side of the slice, midway between the top and bottom of the slice. Continue with remaining slices. The onion slices are now ready to brush with oil and grill. Remove skewers or picks just before serving.
