Mexican Tomato Sauce


Makes 3 cups.

1 sweet onion, peeled and cut into rough chunks
2 cloves garlic, peeled
1 jalapeño pepper, trimmed, seeded and cut into rough chunks
1/4 cup olive oil
1 (28-ounce) can plum tomatoes
1/2 teaspoon allspice
1 teaspoon cinnamon
Salt and black pepper to taste

Place the onion, garlic, and jalapeño in the bowl of a food processor and process together till chunky. Add the tomatoes, allspice and cinnamon and process again till chunky.

Heat the oil in a large skillet, then transfer the contents of the processor to the pan and fry, stirring carefully as the mixture will spatter. Simmer about 20 minutes or until the oil rises to the top, indicating that the sauce is thick enough. Remove from the heat and reserve.
