In this recipe, the Oso Sweet's mild and sweet onion flavor merges beautifully with the delicate flavor of the leek. It's a wonderful accompaniment to any roasted or grilled meat, and is also terrific cozied up against a comfy serving of polenta.
2 large Oso Sweet onions, peeled and cut into 8 wedges (cutting lengthwise through the stem and root ends)
Place the onion wedges and leeks in a single layer in a shallow baking dish. Sprinkle with the garlic and herbs. Season with salt and pepper and drizzle evenly with the vinegar and olive oil. Roast in a 425 degree F. oven until onions are beautifully caramelized and very tender, about 30 to 40 minutes. Gently stir every now and then to baste the onions with the liquid. Remove from oven and serve immediately, or let cool and serve at room temperature.
Yields 6 servings.
