Oven-Roasted Leeks and Oso Sweet Onions

In this recipe, the Oso Sweet's mild and sweet onion flavor merges beautifully with the delicate flavor of the leek. It's a wonderful accompaniment to any roasted or grilled meat, and is also terrific cozied up against a comfy serving of polenta.

bullet042 large Oso Sweet onions, peeled and cut into 8 wedges (cutting lengthwise through the stem and root ends)
bullet042 large leeks, washed and sliced into 1/4-inch thick rings (use white and pale green portions)
bullet043 cloves garlic, peeled and minced
bullet043 4-inch long sprigs fresh sage, coarsely chopped
bullet042 3-inch long sprigs fresh oregano, coarsely chopped
bullet046 to 8 large fresh basil leaves, coarsely chopped
bullet041/2 teaspoon salt
bullet041/2 teaspoon freshly ground black pepper
bullet041/4 cup balsamic vinegar
bullet041/4 cup extra-virgin olive oil

Place the onion wedges and leeks in a single layer in a shallow baking dish. Sprinkle with the garlic and herbs. Season with salt and pepper and drizzle evenly with the vinegar and olive oil. Roast in a 425 degree F. oven until onions are beautifully caramelized and very tender, about 30 to 40 minutes. Gently stir every now and then to baste the onions with the liquid. Remove from oven and serve immediately, or let cool and serve at room temperature.
