Hacienda Onion Salad

As served at Hacienda Los Lingues in Chile, the oldest hacienda in South America, owned by the same family for 18 generations. Easy to make and distinctive in flavor

bullet4 large tomatoes, cut into eighths
bullet1 large Oso Sweet or other sweet onion, halved; thinly sliced
bullet1 bunch fresh cilantro, chopped
bullet1 tablespoon red or white wine vinegar
bullet1 tablespoon lime juice
bulletSalt and pepper to taste
bullet1/2 cup olive oil

In a large salad bowl, combine tomatoes, sweet onion, cilantro, vinegar, lime juice, salt and pepper to taste, and olive oil. Toss well; garnish with cilantro sprigs.

Yield: 6-8 servings.
